BBQ JACKFRUIT SANDWICH WITH VEGAN COLESLAW

What is jackfruit?

 

  • Jackfruit is the new vegan meat food that is innovating the vegetarians and vegans´world. It is a tropical and exotic fruit of origin from a tree in India and the Malaysian peninsula. It is said to be the largest fruit in the world, weighing up to 35 kilos.

 

  • It became very popular as a pulled pork meat replacer as the texture is very similar. 

 

  • Jackfruit in general has a fairly neutral taste, so the seasoning used is very important as it will absorb that flavor. The texture is what makes it resemble meat or pulled pork, even more if it is cooked with barbecue like in this recipe. 

What are the uses that can be given to jackfruit?

 

  • If the jackfruit is ripe, it has a sweeter flavor, similar to a banana. 

 

  • However, when it not ripe yet, it is recommended to be cooked as «meat». If you buy it in a can, make sure you wash it ahead with water to reduce its acidic or salty taste that is often added. This is better explained in the instructions of the can!

 

  • You can buy fresh jackfruit. However, cutting it is difficult and tiring as it is huge, and needs to be boiled into wedges until it is soft so it´s not worth it.

 

  • Besides this «pulled pork» bbq jackfruit there are many other dishes which to make with this great fruit. You can make teriyaki jackfruit, tacos, kebabs, curry jackfruit, etc.

 

TIPS

 

  • Once you have the jackfruit ready, you can serve it on burger bread, or over some lettuce with the bbq coleslaw on the side.

 

  • Make sure you remove any seeds that may be found on the canned jackfruit.

 

INGREDIENTS

 

  • 1 jackfruit can
  • 4 tbsp of barbecue spices
  • 4 tbsp of olive oil
  • 1 tsp of sea salt
  • Barbecue sauce (as required)
  • 1 red onion
  • 1 red cabbage 
  • 3 carrots
  • Juice of 1 lemon
  • Vegan mayonnaise
  • Hot sauce or Tabasco (as required)
  • Salt and pepper (as required)
  • Burger bread to prepare the sandwiches

 

INSTRUCTIONS

 

  1. Open the jackfruit can. Wash the jackfruit very well and remove the water with a strainer. Afterwards, put it in a bowl with water and a bit of baking soda for approximately 2/3 hours. Remove the jackfruit, place on a board and, with the help of a knife and fork, break it into little pieces. The idea is to make it look similar to small pieces of pulled pork.
  2. In a separate bowl, mix the barbecue spices, olive oil and sea salt. Add the jackfruit and incorporate well with a spoon. Place the mixture on a baking tray covered with a baking sheet and cook in the oven at 180 degrees for about 25 minutes. Remove, add 4 tablespoons of barbecue sauce on top, mix and cook again for about 5 minutes. If you have liquid smoke you can add some drops as well.
  3. Meanwhile, prepare the vegan coleslaw salad. Chop the onion, red cabbage and carrots into very thin strips. In a bowl, prepare the sauce. Squeeze the juice of a lemon, two tablespoons of barbecue sauce, 5 tablespoons of vegan mayonnaise and a few drops of hot sauce. Add salt and pepper and mix well. Season the vegan coleslaw salad with that dressing. It’s ready! Finish the dish with the salad and the pulled pork. I ate it in a sandwich and it was super delicious!
