PEANUT BUTTER, OATS AND PECAN NUTS COOKIES

PEANUT BUTTER – THE KEY INGREDIENT

It is key to make sure that the peanut butter has only 1 ingredient: 100% peanuts. Peanut butter is naturally rich in healthy (non-saturated) fats and high in protein. It also contains minerals and vitamins such as iron or potassium that are also very recommended in a healthy daily diet. Some brands tend to add sugar or additives that only increase the amount of calories and decrease its nutritional value. Also, there are some peanut butters that contain salt, converting an ingredient that naturally contains no sodium into one that has up to 150 milligrams!. It is worth noting that peanut butter does have a high number of calories (94 per tbp), so it is important not to over do it!

WHY SHOULD WE ACTIVATE NUTS?

Seeds and nuts are naturally covered by an acid that protects them from animals. Because of this, we cannot take full advantage of their nutrients since they cannot be digested normally. This is why it is so important to activate them to properly absorbe all the nutrients
and benefits that s contain can be taken advantage of. They are activated by being soaked in water, allowing them to absorb it for a couple of hours. Then you need to drain the water well.

INGREDIENTS

  • 1 cup of oat flour
  •  5 tbsp of peanut butter
  • ⅓ cup of cane sugar
  • 2 tbsp agave
  • A pinch of salt
  • 2 tsp of baking powder
  • 1 tsp of vainilla extract
  • 1 tbsp of almond milk
  • Pecan nuts (as required)

INSTRUCTIONS

1. Place the pecan nuts in a bowl with water so that they activate. Leave them for 1/2
hours.
2. Place the oats in a food processor and process them well until to get oatmeal.
3. Mix all the ingredients in a bowl, (first the solids and the almond milk in the end) and form
a dough. With this dough, form little balls with your hands, and smash them with your thumb. In the middle,
place a pecan nut on each cookie.
4. Set the cookies on a tray with a baking sheet. Bake in the oven at 180 degrees for
12/15 minutes. That easy! The oats and pecan cookies are ready!
