Granola is, in case you don’t know, just a mixture of rolled oats with nuts and seeds. It is super healthy and great to start your day. However, most already packed granola brands out there contain a million unnecessary ingredients anda hell of a lot of sugar.
Also, you can add pretty much anything to your granola: dried fruits, pumpkin seeds, even chocolate chips! Every summer, I like to make my own to keep it simple, with the nuts and seeds of my choice, and with no added sugar!
You can even follow this recipe avoiding the cooking step and guess what: you´ve made your own muesli!
If you are adding goji berries, I recommend adding these at the end to the already cooked muesli as they don’t taste great when toasted.
3 cups of rolled oats
2 cups of nuts, seeds of dried fruits: I like to add pumpkin seeds, almonds, nuts, pecan nuts, hazelnuts and goji berries.
If you fancy it, a bit of date syrup
In a food processor, chop all nuts, seeds and dried fruits. Make sure you don’t reduce them to dust: keep them in small pieces so the muesli is crunchy and nice!
Put the rolled oats together with the nuts and seed on a large oven roasting dish, spreading it on a thin coat. If you wan to, you can also add a bit of date syrup on top, which will make it extra crispy.
Put it in the oven at 170 degrees for 10 minutes, take it off, mix it, and put it back for another 10 minutes. Continue to cook it if required: the idea is for it to be slightly toasted but not burned down! If it’s starting to get slight golden, time to take it off the oven.
Let it cool down and keep it in a mason jar so it doesn’t get dry!
