WHY SHOULD I COOK WITH ALMOND FLOUR?

Flour is a key baking ingredient. Although white wheat flour is the most popular one, it is definitely not the only one.

Almond flour is a great option for people with celiac disease, who follow a gluten-free diet, or for those who are trying to cut off or reduce carbs from their diet.

 

HOW DO YOU MAKE HOMEMADE ALMOND FLOUR

The good thing about almond flour is that even though you can buy it in stores, it can also be prepared at home, which is much cheaper!

Preparing almond flour at home is super simple: process 1 cup of almonds (previously activated) on maximum speed until dusted. Blend them all until the consistency is exactly like flour.

I recommend activating the almonds before, to absorb all their nutrients. For this, simply put them on a bowl with water for 4-5 hours and then dry them well with a cloth.

RECIPES WITH ALMOND FLOUR

You can use almond flour for almost everything. Almond flour can be used as a replacement of wheat flour, as a healthier and gluten-free alternative.

You can prepare cakes, pasta, bread, cookies, puddings, waffles, everything!

 

WHY ARE ALMONDS A HEALTHY SNACK?

Almonds are a very healthy snack. They have lots of nutritional advantages:

  • They are packed with protein, fibers, vitamin E and healthy fats
  • They help regulate blood sugar levels.  This happens because they are high in magnesium.
  • Almonds lower cholesterol as they increase your levels of vitamin E in your body.
  • Almonds are antioxidants, which aids the heart and blood pressure.

 

TIPS

  • When making the flax egg, pour water little by little to obtain the consistency of a beaten egg.
  • To know if the muffins are ready, simply put a wooden toothpick in a muffin – it must come out dry and without pieces of dough. If it comes out with bits of dough, it means that it is still raw inside.

 

INGREDIENTS

  • 2 ripe bananas
  • 1 cup of oatmeal
  • 1 cup of whole spelled flour
  • 1 cup of almond flour
  • 1/4 cup of cane sugar
  • 3/4 cup of unsweetened almond milk
  • 1 heaping tbsp ground flax
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 2 tbsp agave or date syrup
  • 3 tbsp of almond oil or other vegetable oil (avoid extra olive because its flavor is very strong)
  • 1 cup of chopped walnuts

 

INSTRUCTIONS

 

  1. Place the chopped walnuts in water and let them soak for the entire time it takes you to make the recipe. If you can, let them soaking for a few hours.
  2. Prepare the flax egg. In a bowl, add 1 tbsp of ground flax with 2/3 tablespoons of cold water and mix. Let it sit for 5 minutes.
  3. Preheat the oven to 190 degrees. In a large bowl, mash the ripe bananas. Then add the dry ingredients. Flours, sugar, baking powder, bicarbonate, salt, oats, vegetable oil, agave, and milk are also added. Stir it until obtaining a nice paste. Finally, add the chopped walnuts.
  4. Place the dough on a muffin tray, previously covered with a bit of oil, or on a silicone tray directly. Cover 2/3 of each muffin as they will grow in the oven!
  5. Cook the vegan muffins at 190 degrees for 25/30 minutes. One they have grown and they have a slight golden top, they are ready to enjoy!
