VEGAN CHEESE BREAD

WHAT IS CHIPA OR VEGAN CHEESE BREAD?

Cheese bread are rolls traditionally made of tapioca starch and cheese. Over the years, they became popular in countries like Argentina and Paraguay where you can find lots of street stands selling them. 

    Cheese bread was first created in Paraguay and northwestern Argentina, in the Guaraní Jesuit missions. Before the missions, the Guaraní used to prepare tapioca cakes and bread. When the Jesuits arrived in the area, they brought with them a variety of ingredients and new ideas,  creating new meals that are known to this day, such as the famous gluten-free cheese bread. 

    Over the years, different variants of these rolls were invented in different countries. In Argentina, it is common to make cheese bread without adding cornflour, whilst in Brazil it is known as “pão de queijo”. In any case, throughout all the region it is popularly known as cheese bread or “chipa”. One of its best features is that it is naturally gluten-free!

BUT…HOW CAN YOU MAKE CHEESE BREAD WITHOUT THE CHEESE!?

Although the original cheese bread has cheese, this vegan cheese bread recipe is ideal to accompany your  soups, or to enjoy at tea time. Adding nutritional yeast and vegan cheese gives the vegan cheese bread a very similar texture to the original recipe. However, the secret is in the potato. When adding a mashed potato, the texture you obtain is like the one on melted cheese. 

INGREDIENTS

  • 1 big potato
  • 2 tapioca flour cups
  • ½ cup of boiling water
  • 3 tbsp of olive oil
  • 3 tbsp  of nutritional yeast
  • 1 tsp of baking powder
  • 1 tsp of garlic powder
  • 1 tsp of onion powder
  • ½ cup of grated vegan cheese (for example, mozzarella)
  • 3 tbsp of unsweetened soy milk
  • Salt and pepper

INSTRUCTIONS

  1. Boil the potato, remove the skin, and mash it to make a puree. Reserve.
  2. In a bowl, mix the olive oil, the boiling water, and the soy milk. In another bowl, mix all the other ingredients, except the potato (the solid ingredients). Add the liquids to the bowl of solids, and integrate them well. Then add the mashed potato and form a dough.
  3. Make small balls with the dough and place them on a oven tray covered with greased paper.
  4. Cook the vegan cheese bread in the oven at 180 degrees for around 10/15 minutes. When they begin to get golden on the top, remove from the oven and serve. They are ready to enjoy!
